"Cowpeas"
 
   :9 I'm trying to find info on cowpeas-- do I cook them or serve them raw? I have tons of them & just want to serve them at their most delicious

   Hi Patricia,
Cow Peas, also known as Southern Peas, are more beanlike than pealike and can be used at all stages: snap, shell and dried. Since you have an abundance once you have had your fill of fresh use, dry plenty for wintertime use. To use like you would snap beans pick them immature. For shelling peas pick a little later but before the pods turn yellow. For dried beans allow them to fully mature, shell them, dry them and store in an airtight container.

   Hi, We feed the cow peas to the cows when we lived on the farm..Just joking! We shelled them and boiled them just like you would purple hull peas. I'm sure there are several different ways.

   Me again, We also shelled them and froze them for later use and they are great took out of the freezer and boiled. Marshal
