Hi Patricia, Cow Peas, also known as Southern Peas, are more beanlike than pealike and can be used at all stages: snap, shell and dried. Since you have an abundance once you have had your fill of fresh use, dry plenty for wintertime use. To use like you would snap beans pick them immature. For shelling peas pick a little later but before the pods turn yellow. For dried beans allow them to fully mature, shell them, dry them and store in an airtight container. Have a great harvest, Diane
