   HI Dan,

When you see the corn ripening and the color is good you can harvest your Indian Corn. The husks will often be turning a whitish appearance by this time. Crows will eat the corn so it is best to get it in a safe place as soon as you see it ready.

For displaying the corn you should peel back the husks (leave them attached) so you will be able to see the corn. Otherwise if you leave the husks in place you risk mold and then the husks become brittle and you can’t remove them without them breaking apart after they are completely dry.

Hang up in a garage or someplace airy to completely dry. Mice also would love to eat the corn so keep it out of their reach. We once had Indian Corn eaten right off the front door! I know it wasn’t a mouse but maybe a bird or acrobatic squirrel!

Store in a paper bag or even better would be a box when the fall season is over. If taken care of your corn can last a few seasons for display.

John
